simplified and healthy Vegetarian Red Pasta Recipe
Ingredients for Pasta:
Fettuccine pasta
Water
Ingredients for Pasta Sauce:
One Tomato
Two red bell peppers
One medium-sized carrot
Cabbage or Cauliflower
Two Garlic
Milk
Spices (use any as per taste):
Salt
Black Pepper
Chilli powder
Paprika
Toppings:
Spinach
Seseme seeds
Making the Red Sauce:
Roughly chop the tomatoes, peppers, carrot, cabbage/cauliflower and garlic. Transfer these to a pot.
Add water to the pot, covering all the vegetables.
Add your spices to taste: Salt, Black Pepper, Chilli power and Paprika.
Boil until the vegetables are soft.
Remove from heat once vegetables are tender and allow too cool.
Blend in a high-speed blender and use milk to adjust consistency to choice.
Sauce done!
Cooking the Pasta:
Cook the fettuccine pasta as per the package instruction.
Combine:
Stir the pasta into the sauce and add chopped spinach and sprinkle sesame on top.
Optional: Add crushed black pepper on top for extra flavour or even stir in some cheese.
